I'm a bit lost where to start on this one. I'm trying to report on mail sending through a specific receive connector (On premise Exchange Version 15.0 (Build 1497.2) ). Ideally I would like the IP address, From and To.
Would this even be possible?

This is not really a PowerShell specific feature, code issue or problem, which is what we are here to help with, but a question on can I do this on Exchange proper.
If you can't see/do this via the GUI, then you'll have issues doing it with PowerShell. X or Y needs to be exposed by Microsoft to mess with things. Thus when digging at say, MS Exchange, you really need to be digging at the Exchange Service and API documentation to see what is that as possibilities of interop with them. Otherwise, logs are what the path is.
